WATER QUALITY

The Dornoch Firth is a "Designated Shellfish Harvesting Water" under EC Directive 79/923 which affords the Firth protection against pollution incidents and the deterioration of its water quality. Furthermore, the Firth has been classified grade "B" as a shellfish water under EC Directive 91/492. This latest classification means that mussels from the Dornoch Firth should not be eaten in the raw state. Mussels should be cooked prior to consumption.
